Raw Cashew Mayonnaise

Love Mayonnaise but your stomach doesn't? 

I love the creaminess of mayonnaise but typically if I purchase it from a market it is full of ingredients that don't love me. Even the organic or more 'healthy' versions tend to use canola oil or other oils that irritate as a base. Or they still contain additional ingredients to increase mouthfeel and extend shelf life, none of which are belly friendly. 

This is a quick and easy replacement that replaces mayonnaise in just about any dish. It's especially delicious as a in cole slaws or veggie salads. Feel free to experiment with the ingredients to get just the right flavor and texture for your palate. 

INGREDIENTS

  • 3/4 cup of raw cashews (soaked overnight then drained)
  • 1/4 cup virgin olive oil or avocado oil
  • 1/4 cup water
  • 1 TBS lemon or lime juice 
  • 2 teaspoons apple cider vinegar
  • 1/2 teaspoon mustard powder
  • 1/2 clove of fresh garlic
  • Himalayan sea salt and pepper to taste

METHOD

blended cashewsBlend the raw cashews, Himalayan sea salt & pepper in a high-speed blender or food processor until super fine powder.

Blend in lemon and oil. Add mustard and garlic..

Blend until thick and smooth, should take around 20 seconds.

Continue to add a few tablespoons of water at a time until desired consistency is reached.

You can vary as you like and add water to thin it out as it will naturally thicken in the fridge as the cashews absorb most moisture.

Store in the fridge for up to 3 days and use on salads, rice, sourdough, in pasta... the choices are endless!
