KETO-NOLA: a delicious option for breakfast

Sometimes breakfast is the most challenging meal of the day because we're used to eating things like cereal or porridge. The LCHF lifestyle doesn't include processed or manufactured cereals or overly processed grains. So, what can you do when you find yourself craving a quick bowlful of something or other?

Make Keto-Nola

There are actually several variations possible for this recipe, in fact, you're limited only by your imagination. Here's the one I made today:

  • 2-3 cups of mixed nuts; any combination
  • 1/4 c. sesame seeds
  • 1 TBS flax seed meal
  • 1/2 c. pumpkin seeds
  • 2 TBS coconut oil or ghee
  • 1/4 c. coconut flakes (no sugar)
  • 1/2 tsp cinnamon
  • (optional sweetener; stevia)

ketonolaGrind nuts (but not seeds) until rough grind. Just a few seconds should work as you don't want them to be too fine. Pour into a bowl, add in rest of ingredients except oil.

Now you have two options you can either bake your mixture in the oven on about 350, stirring while browning and roasting. Or you can toss them in a skillet and brown and roast on stovetop.  If you bake them, melt the oil first, toss the mixture until fully coated and then spread on a cookie sheet. Place in oven and roast, stirring frequently. Whichever you choose, make sure to keep stirring so they don't over-brown or burn. Takes about 15-20 mins, observe carefully.

If you choose the stovetop, melt the oil in a large skillet. Add mixture and continue to stir and shake until well browned and almost crispy. The seeds will begin popping and sizzling. It takes about 15 minutes to thoroughly cook.

Once cooked, let cool on counter until thoroughly cool. Then put them in a jar and enjoy. You can keep them in the refrigerator for a couple of weeks, or on the counter (which will keep them drier, for a week or so).

You can enjoy them in the morning with a bit of cream or full fat yogurt. Or sprinkle over cream and fruit, or just nibble right out of the jar. If you give it a try, let us know how it goes.
