Kid Friendly Keto Meal - Faux-tato tots!

Every kid loves tater tots (or croquettes in the UK)...and what's not to love, crispy fried potato goodness. But in today's world, especially if you're buying them already prepared then they are just not a healthy option no matter how you cook it. 

If you're making them from scratch, they can be a little bit better, but really if you're trying to avoid carbs they are the last thing you should be eating. So, how can you make a delicious alternative that even your kids will love? 

Faux-tato tots

  • 1 sm head of cauliflower - grated
  • 6 oz. of cheddar cheese
  • 1 egg
  • 1 TBS of coconut flour

Preheat oven 425 

Grate cauliflower and steam until just beginning to soften (about 7-8 mins). Place cotton towel or cheese cloth in a strainer. Pour in cauliflower, wrap with towel, and squeeze out as much liquid as possible. It will be hot so be careful. I sometimes use the bottom of a bowl to press out the towel. 

Once the liquid has been adequately removed, place in a bowl. Add cheese, coconut flour, and egg. Mix altogether. Use spoon to scoop small round amount, shape into ball or oblong.  Fill cookie sheet then place in oven for about 20  mins or until desired crispness and color. Turn every 10 minutes or so. 

Remove from oven, let cool slightly enjoy!

To complete this meal, I added a venison burger and steamed broccoli with butter and parmesan cheese. 

Venison, as a wild game meat, is a high purine protein and a great source of nutrients. I minced the meat, added an egg, and zaatar as a spice, then pan fried. Broccoli just steamed with butter. The whole meal took abou 30 minutes, less if the croquettes are made ahead of time. (just as another little add-in, you can use the same recipe to also make flat breads)
